  • 1 cupCooked brown rice
  • 1 can (14 oz)Canned diced tomatoes

  • 1 tspItalian seasoning
  • 1/2 cupShredded part-skim mozzarella

Instructions

Slice the tops off the bell peppers, discard the ribs and seeds, and rinse. Place them upright in a baking dish.
