Healthy Stuffed Bell Peppers
Sweet bell peppers stuffed with lean ground turkey, brown rice, and tomatoes, baked and topped with a sprinkle of melted mozzarella.
Ingredients
4 servings- 4 largeBell peppers (red, yellow, or orange)
- 1 lbLean ground turkey (93% lean)
- 1 cupCooked brown rice
- 1 can (14 oz)Canned diced tomatoes
- 1/2 cupYellow onion, chopped
- 2 Garlic cloves, minced
- 1 tspItalian seasoning
- 1/2 cupShredded part-skim mozzarella
Instructions
Step 1
Preheat the oven to 370°F (188°C).
Step 2
Slice the tops off the bell peppers, discard the ribs and seeds, and rinse. Place them upright in a baking dish.
Step 3
Heat a large skillet over medium-high heat. Sauté ground turkey, onion, and garlic until the turkey is fully browned.
Step 4
Stir in the brown rice, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 3 minutes.
Step 5
Stuff each pepper with the turkey and rice mixture.
Step 6
Cover the baking dish with foil and bake for 35 minutes.
Step 7
Remove the foil, sprinkle the tops with mozzarella, and bake for another 5 minutes until cheese is melted and bubbling.
